How are you doing this fine day? I hope you are enjoying the wonderful weather and everything that it brings. I find myself sitting on my back deck taking in the sun & breathing in the fresh air while I listen to the birds chirping. I love this time of year!!
This past month also marked my 50th birthday. It is a milestone that I can honestly look over & see how blessed I am with health, happiness & so much love from my husband & my two children. I am surrounded by friends & family who have been a special part of my life & I am forever grateful. This year I have a lot of plans so keep your eyes & ears peeled. As you all know Food Revolution Day took place Globally on Friday May 16th at Barrie City Hall. It was great to have so many vendors and visitors support the day. Many thanks to our volunteers and vendors who braved the not so warm day & greeted everyone with a friendly Food Revolution Day smile. A day like that can not be done without the support of people like you. We also had the pleasure of our local dignitaries coming out to support the day with a flag raising ceremony and Town Crier Steve Travers was on hand to Proclaim Food Revolution Day 2014. On hand were Mayor Jeff Lehman, MP Patrick Brown, MPP Rod Jackson, Councillor Alex Nuttall & Green Party Candidate Bonnie North. What an honour to have MP Patrick Brown present me with an official Certificate of Appreciate from The House of Commons. What a truly great day and I cannot wait to get planning 2015 along with my fellow ambassador Kathryn Abel. Pea, Feta and Mint Frittata
Ingredients
For the frittata:
- 3 free range eggs
- Drizzle olive oil
- Salt and pepper to taste
- Pinch paprika
For the pea, feta and mint filling:
- 55g fresh shelled peas
- 55g feta cheese, broken into small cubes
- 1½ tbsp fresh mint, rough chopped
Instructions
Break the eggs into a bowl and whisk well, add 1 tablespoon of your chosen herb at this point, season with salt and pepper.
Heat small non-stick oven proof frying pan over a medium heat (the pan will be going under a grill so you must ensure it’s handle is heat proof). Add drizzle of oil, when hot add beaten eggs, sprinkle over your chosen mixture. Using a spatula give the mixture a stir, to ensure the egg gets into all the ‘nooks and crannies’. Lower the heat and cook for approximately 3 - 4 minutes.
Place under a hot grill to finish off cooking and ensure that the surface of the frittata is lightly coloured. You want the frittata to be firm on the surface but slightly soft and runny in the centre.
Gently remove the frittata from the pan and leave to cool, sprinkle with a little paprika and remainder of your chosen herb. The frittata will continue to firm up as it cools.
Add your pea, feta and mint frittata filling.
