MGC NUTRITIONAL SUMMER QUICKIE- JULY, AUGUST
Dear Friends of Make Good Choices,
I have to say that it is turning out to be a lovely July and so many things to be thankful for. I know there are many in our region of Ontario that have had severe thunderstorms and tornadoes rip through their communities and have caused destruction. There are many storms in the Prairie Provinces and in the United States. For those of you whom have weathered these, please know that we are rooting for you and praying that you are all safe, secure and with family and friends surrounding you. There are blessings that we all can be thankful for. When tragedy strikes this is when we gather closer and count the blessings we have.
As I mentioned in another newsletter, I had just celebrated a milestone birthday and now we are gearing up for my husbands. It's funny to hear people our age (50) speak of "when we were children." It's like we are hearing our parents. Too funny! Here's a little blurb on children of the 50's, 60's and 70's you might get a chuckle from. Click here. Speaking of moving up in age.....
My father is 83 years old and he just loves life. When I mention that he might want to eliminate a certain food and try "this" instead, or to include more water because it will be better for his joints he gives me a look and then a chuckle and then he proceeds to ask me a ton of questions. He sure keeps me on my toes and really he is 83 years old. He has been doing something right. One of the main things that I believe he has and others his age have in their favour is the foods they ate as youngsters and well into their young adulthood wasn't modified. There were not the additives and preservatives that we see today. Their food was a whole as you could get and supermarkets didn't begin until 1946. Did you know that?
They grew vegetables and in his neighbourhood of Toronto in the 40's they had a "Victory Garden." He would have been 16 or 17 years old. He would collect manure from the cows and bring it to his garden to help cultivate and nurture the soil. Still to this day he plants a garden and whether vegetables, flowers or shrubs he does a great job. Winning the Community Garden award twice in Etobicoke. The reason I bring this up is, if you can plant a garden or get to the Farmers Market do so. Try to stay as close to the real deal as possible. This newsletter is about being connected to the summer and all it's beauty. From the warmer temperatures to the plants that grow this season. RECIPE
BLACK BEAN FIESTA
1 white onion, diced, divided
1/2 pint cherry tomatoes, chopped
3/4 cup crumbled goat feta
1 cup fresh corn kernals
3 tbsp lime juice
1 red bell pepper, diced
1 tbsp. extra virgin olive oil
2 398 mL cans no salt added black beans, drained and rinsed
3/4 tsp sea salt
150 g tortilla chips
Add together in a bowl and keep the tortilla chips on the side to dip into. Enjoy!!!
