What are you doing to keep warm this winter?
It's so nice to be able to get away to the warmer weather but there is something to be said about crisp, white snow and all the winter fun that can be had. My biggest winter thing is bundling up in many layers and going for a walk.
I am not a skier, although have attempted and I like tubing and snowshoeing but I really haven't made those a priority. So walking it is!
In weather like this it's so important to fill our bellies with more warming foods.
It's great if you can be in a warmer temperature, then cooler foods are fantastic.
Warming foods in colder weather make for healthier digestion and overall feeling of warmth inside and out. I'd like to give you a recipe for a wonderful soup to keep you warm. Filled with lots of great ingredients this soup provides the fibre (complex carbs), proteins and fats that are so essential.

RECIPE:
Kale, Potato and Lentil SoupServes 4-62 tbsp coconut or olive oil2 onions, thinly sliced2 leeks thinly sliced (use white part only)1 cup curly kale, finely chopped6 cups water2 medium potatoes, unpeeled and cubed1/2 cup (115g) Black lentils ( green lentils may be substituted)4 tsp Reduced Salt Vegetable Bouillon powderFreshly ground black pepper1. Heat the oil in a pan and fry the onion slices until they start to soften.2. Add the leeks (If the pan is too dry, add a little water), cover and sweat for a few minutes until they start to soften.3. Add kale and cook until soft.4. Add water and mix well.5. Add the potatoes and lentils.6. Cook until it starts to boil, reduce the heat and add the bouillon powder and pepper.7.
